Recipe for Banana Nut Muffins

Yeah, I know…. the last recipe I posted had bananas in it too.  Can you tell I like bananas????  Here is a very easy and delicious recipe for banana nut muffins.  Hope you enjoy! 

Banana Nut Muffins

1 cup sugar

2 cups flour

3/4 cup butter or margarine

1 teaspoon baking soda

3 bananas

2 eggs

1 cup chopped nuts

 Cream your butter and sugar together. 

Add mashed bananas.  As you can see, I use very ripe bananas!

Add sifted flour and soda a little at a time.

Then add nuts (I prefer pecans). 

Add beaten eggs.

Mix together thoroughly and pour into greased muffin tins.  Fill about 3/4 full as they will rise. 

Bake in preheated 350° oven for about 20 minutes.

The finished product!!  Makes a great breakfast with a cup of coffee… yum.
