Good ole southern comfort food and definitely one of my husband’s favorites!
Saucy Ham and Potato Bake
2 tablespoons chopped onion (I use a little more than this)
1/4 cup margarine or butter
1/4 cup flour
1 teaspoon salt (I use less than this)
1/2 teaspoon dry mustard
Dash of pepper
1 1/2 cups milk
2 cups (8 oz.) shredded mild cheddar cheese
1/2 lb. ham cut into 1/8-inch slices
6 cups cooked potato slices
Saute onion in margarine. Blend in flour and seasonings. Gradually add milk; cook, stirring constantly until thickened. Add 1 1/2 cups cheese; stir until melted. Toss potatoes and ham in cheese sauce. Pour into 2-quart casserole. Top with remaining cheese. Bake at 350 degrees for 30 minutes. 6 servings.
